We feature a few different dining options on the property — the Old Ray restaurant in the main hotel, the Washroom Bar in the basement of the NuWray, Carriage House Sundries right next door, and Roland's Bar on the outdoor deck. Learn about our current food & beverage options below.


The Old Ray Restaurant

In 1867, when Garret Deweese Ray purchased the hotel, he named it Ray's Hotel. Over time, locals started referring to it as "The Old Ray". Around 1915, Garret's daughter Julia inherited the hotel alongside her husband, William Brian Wray. After a major expansion, they renamed it the NuWray Hotel as a play on its nickname, and to acknowledge the shift from Ray to Wray.
And the rest is history!

Why "The Old Ray"?

The Washroom Bar
In the basement of the NuWray (which was used as the laundry room for decades), enjoy our speakeasy style bar, centered around the hotel's original laundry machine from the late 1800s. This bar offers cozy lounge seating, small bites, classic cocktails, and a great (& growing!) bourbon list.

Carriage House Sundries
Located in the original Carriage House building just behind the NuWray Hotel, our sister restaurant & bar serves up coffee, pastries, brunch & dinner. The shop also carries baked goods, premium wines, cigars, and other retail items. Visit us for one heckuva time!

Why Roland's?
Our outdoor bar is located in the hotel's original smokehouse, where thousands of hams were smoked and cured each year to supply the famous family-style feasts the NuWray was once known for. Will Roland was the chef at the hotel for 40+ years in the first half of the 20th century, and his family has deep ties to the NuWray and Burnsville. Some of his recipes are included in the old NuWray cookbook, and it was Will who perfected the method of smoking and curing hams.
We chose to name the bar after him, with permission from his family members who still live in the area, as a way of honoring his contribution to the culinary traditions of the NuWray. There’s something really special about sitting at this bar, where you can look up at the original beams, still charred from ages-old smoke.
